Hot Sauce Recipe with Roasted Peppers and Carrots

The secret to this hot sauce is the combination of carrots and roasted peppers. The carrots give the sauce a sweetness that balances out the heat of the peppers. The result is a delicious and versatile hot sauce that Bun&Beary love to use on everything from tacos to eggs.

200grHot peppers
100grRed kapia peppers
4 piecesMedium carrots
300mlDry red wine (Fetească neagră)
200mlApple juice
2 clovesGarlic
2 piecesRed onion

  1. Preheat oven to 200°C/400°F
  2. Roast the carrots for about 1 hour, or until soft and tender.

  1. While the carrots are roasting, wash and dry the jars.
Peppers
  1. Roast the peppers, either on the stove or in the oven, until charred. Peel, seed, and set aside.
TIP

For a spicier hot sauce, add a jalapeño pepper or two to the roasting pan.

  1. Cut the garlic and the onions into small dices.

  1. Add 100ml wine, the garlic, the onions and let it simmer for 2-3 minutes.
  2. In a large pot, combine the roasted carrots cut into 1cm pieces, peppers, onion, garlic, wine, apple juice, and salt. Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until the vegetables are very soft.

  1. Let the mixture cool slightly, then add the lime juice and blend until smooth.
  2. Strain the hot sauce through a fine mesh sieve, if desired.
  3. Pour the hot sauce into the prepared jars and seal tightly.

  1. Store the hot sauce in the refrigerator for up to 2 weeks, or preserve it using the technique below.

How to preserve the sauce

  1. Put the jars into a oven tray or in a large pot, add water 3/4 of the height of the jar.
    • If using the oven, put the tray in the oven, and set the temperature to 150°C/300°F.
    • If you’re using the large pot, cover the jars with a towel.
  2. Wait until the water is boiling, about 40 minutes.
  3. After that let the jars boil for another 30 minutes.
  4. You can either leave the jars in the oven/pot to gradually cool down overnight, or remove them carefully and cover them with a dry towel or blanket and leave them to cool down.
  5. Store them in a cool, dark place.
